      <image:caption>To roast chickpeas, preheat your oven to 425 degrees, drain a can (save the liquid if you are into using aquafaba) of chickpeas, shake off any water from the strainer and dump chickpeas onto a double-layer towel (I use paper towels for this, clean cotton is fine too). Use another towel of choice to "dry" the top, and if you have time, let them sit 10-15 minutes (the goal is to get them really dry so the oil will "stick" to the outside helping create crunch).  Toss each can (you can do 2 cans at once, maybe more if you have a very large baking sheet) with about 1 tbsp. olive oil and an optional pinch of salt.  Spread evenly on a pan with shallow sides and roast in the oven for 20-25 minutes, or until warm and crunchy.  This get more chewy as they cool, which some people prefer.  They can be reheated if you like them warm (I broil them for 3-5 minutes).  We usually go through the can in a day, but they are generally good to eat for up to 3 days, refrigerating them overnight.</image:caption>
